Garlic Butter Steak Bites with Mushrooms and Crispy Shallots

The steak cooks quickly in a hot skillet, the mushrooms soak up the garlic and butter, and the shallots bring just enough crisp sweetness to make the whole thing feel special without turning dinner into a project.

It is high in protein, very low in carbohydrates, and rich enough to feel satisfying as the weather cools and schedules tighten up.

Three Ingredients and Why They Work

Beef

Beef is grounding, nourishing, and highly satisfying, which makes it especially useful as the weather begins to cool and Vata starts to become more prominent. It also delivers a substantial amount of protein without requiring a large volume of food.

Mushrooms

Mushrooms bring earthiness and moisture, helping the meal feel richer without needing a heavy sauce. They pair especially well with butter, thyme, and beef.

Shallots

Shallots provide sweetness and aromatic depth. Cooked until crisp, they add texture and contrast to an otherwise very rich, soft dish.

Garlic Butter Steak Bites with Mushrooms and Crispy Shallots

Ingredients

For the steak

  • 1 1/2 pounds sirloin, ribeye, or strip steak, cut into 1-inch pieces

  • 1 teaspoon sea salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon olive oil or avocado oil

  • 3 tablespoons butter, divided

  • 3 cloves garlic, finely minced

  • 1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme

For the mushrooms

  • 12 ounces cremini or baby bella mushrooms, sliced

  • 1 tablespoon butter

  • 1/4 teaspoon sea salt

  • Black pepper, to taste

For the crispy shallots

  • 2 large shallots, very thinly sliced

  • 1 tablespoon olive oil or avocado oil

  • Pinch of sea salt

Instructions

Crisp the shallots

Heat 1 tablespoon oil in a large skillet over medium heat.

Add the sliced shallots and a pinch of salt. Cook slowly, stirring often, until deeply golden and crisp, about 8 to 10 minutes.

Transfer to a plate lined with paper towel and set aside.

Cook the mushrooms

Increase the heat to medium-high.

Add 1 tablespoon butter to the same skillet, followed by the mushrooms.

Season lightly with salt and black pepper and cook until browned and tender, about 6 to 8 minutes.

Remove from the skillet and set aside.

Sear the steak

Pat the steak pieces dry with paper towels and season with salt and black pepper.

Add the oil to the skillet and heat until very hot.

Working in batches if needed, add the steak in a single layer. Sear for 2 to 3 minutes per side until browned and cooked to your preferred doneness.

Do not crowd the pan or the steak will steam instead of sear.

Finish with garlic butter

Return all of the steak to the skillet.

Add the remaining 2 tablespoons butter, garlic, and thyme.

Toss for about 30 to 60 seconds, just until the garlic is fragrant and the butter coats the steak.

Return the mushrooms to the pan and toss everything together.

Serve

Transfer the steak and mushrooms to a serving platter or individual plates.

Top generously with the crispy shallots and a little extra thyme or black pepper if desired.

Serve immediately.

Cooking Notes

Sirloin works especially well here because it is lean enough to cook quickly while still staying tender.

Ribeye gives you a richer result if you want more fat and flavor.

Pat the steak dry before cooking. Moisture is the enemy of a good sear.

Cook the steak in batches if necessary. Crowding the pan will lower the temperature and make the meat gray instead of browned.

The shallots can be made a few hours ahead and kept at room temperature.
