Pumpkin Cheesecake Mousse with Brown Butter Pecans

I wanted something pumpkiny that felt like an actual dessert, not a sad little health-food impersonation of one.

This pumpkin cheesecake mousse is rich, creamy, lightly spiced, and just sweet enough. Cream cheese gives it body, heavy cream makes it properly luxurious, and pumpkin brings the fall flavor without taking over the whole thing.

The brown butter pecans are optional, technically.

I would not skip them.

They bring salt, crunch, and that nutty browned-butter flavor that makes the mousse feel finished.

This is low in sugar and carbohydrates, but that is not really the point.

The point is that it is delicious enough to satisfy the desire for dessert without making you feel like you settled for the “healthy version.”

Three Ingredients and Why They Work

Pumpkin

Pumpkin is sweet, soft, and grounding, qualities that fit beautifully with cooler Vata-season weather. It does contain more carbohydrate than many foods we regularly use, but the amount per serving here remains modest because the pumpkin is paired with substantial fat and protein.

Cream Cheese and Heavy Cream

These bring richness, moisture, and satisfaction. From an Ayurvedic perspective, their heavy and unctuous qualities help counter the lightness and dryness of Vata, while metabolically they make a small portion feel genuinely substantial.

Cinnamon and Ginger

These warming spices balance the cool, heavy qualities of the dairy and pumpkin. They also give the mousse the unmistakable flavor of fall without relying on sugar to create interest.

Pumpkin Cheesecake Mousse with Brown Butter Pecans

Ingredients

For the pumpkin cheesecake mousse

  • 8 ounces cream cheese, softened

  • 3/4 cup pumpkin puree

  • 1/3 cup powdered allulose, or to taste (I have also used liquid stevia and/or monk fruit to great success)

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon ground nutmeg

  • Pinch of ground cloves

  • 1/4 teaspoon sea salt

  • 1 cup cold heavy cream

For the brown butter pecans

  • 1 cup pecan halves, roughly chopped

  • 2 tablespoons butter

  • 1 tablespoon allulose

  • 1/4 teaspoon cinnamon

  • Pinch of sea salt

Instructions

Make the brown butter pecans

Melt the butter in a skillet over medium-low heat.

Continue cooking until it foams and the milk solids begin turning golden brown and smelling nutty.

Add the pecans, allulose, cinnamon, and salt.

Cook for 2 to 3 minutes, stirring frequently, until the pecans are toasted and coated.

Transfer to a plate and let cool completely.

Make the cheesecake base

Add the softened cream cheese to a large bowl.

Beat with a hand mixer until completely smooth.

Add the pumpkin puree, allulose, vanilla, cinnamon, ginger, nutmeg, cloves, and salt.

Beat again until smooth and evenly combined.

Taste and adjust the sweetness or spices if needed.

Whip the mousse

With the mixer running on low, slowly pour in the cold heavy cream.

Increase the speed and whip until the mixture becomes light and fluffy and holds soft to medium peaks.

Do not keep going indefinitely. We are making mousse, not pumpkin butter.

Chill

Spoon the mousse into individual glasses or bowls.

Refrigerate for at least 30 minutes before serving.

Serve

Top each serving with the cooled brown butter pecans.

Add a small sprinkle of cinnamon or flaky salt if desired.

Cooking Notes

Use plain pumpkin puree, not pumpkin pie filling.

Make sure the cream cheese is fully softened or you may end up with small lumps.

The mousse can be made a day ahead and kept covered in the refrigerator.

Add the pecans just before serving so they stay crisp.

For an even richer mousse, increase the cream cheese to 10 ounces.
