Turkey Meatballs with Sage Brown Butter and Roasted Cauliflower

This is the kind of dinner that makes fall feel useful.

Turkey meatballs can be bland if you let them, which is why I do not let them. These are seasoned with sage, garlic, thyme, and black pepper, then finished with brown butter that picks up all those nutty, savory flavors and makes the whole dish feel much more substantial.

The roasted cauliflower keeps the meal low in carbohydrates without making it feel like diet food. It gets deeply browned at the edges, which matters, because pale steamed cauliflower is one of life’s lesser experiences.

This is simple enough for a weeknight, but it still feels like you made dinner on purpose.

Three Ingredients and Why They Work

Turkey

Turkey is lighter than beef or pork but still provides plenty of protein. From an Ayurvedic perspective, it can be grounding without feeling overly heavy, which makes it useful during early fall when the weather is cooling but we are not yet in the deepest part of Vata season.

Sage

Sage is warming, aromatic, and deeply associated with fall for good reason. Its pungent quality pairs especially well with richer fats like butter and helps give lean turkey much more depth.

Cauliflower

Cauliflower is low in carbohydrates and works well as a base for a protein-forward meal. From an Ayurvedic perspective, cruciferous vegetables can be more Vata-provoking, so roasting them thoroughly with oil and seasoning makes them much easier to tolerate than serving them raw or barely cooked.

Turkey Meatballs with Sage Brown Butter and Roasted Cauliflower

Ingredients

For the turkey meatballs

  • 1 1/2 pounds ground turkey

  • 1 large egg

  • 2 tablespoons finely chopped fresh sage

  • 1 tablespoon fresh thyme leaves

  • 2 cloves garlic, finely minced

  • 1 teaspoon sea salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon onion powder

  • 1 tablespoon olive oil

For the roasted cauliflower

  • 1 large head cauliflower, cut into florets

  • 2 tablespoons olive oil

  • 3/4 teaspoon sea salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon garlic powder

For the sage brown butter

  • 5 tablespoons unsalted butter

  • 6 to 8 fresh sage leaves

  • 1 teaspoon fresh thyme leaves

  • 1 small garlic clove, finely minced

  • Pinch of sea salt

  • Black pepper, to taste

Instructions

Roast the cauliflower

Preheat the oven to 425°F.

Place the cauliflower florets on a large sheet pan. Toss with olive oil, salt, black pepper, and garlic powder.

Arrange in a single layer and roast for 25 to 30 minutes, turning once halfway through, until deeply browned and tender.

Make the meatballs

In a large bowl, combine the ground turkey, egg, sage, thyme, garlic, salt, black pepper, and onion powder.

Mix gently with your hands until just combined.

Shape into meatballs, about 1 1/2 inches each.

Heat the olive oil in a large skillet over medium heat.

Add the meatballs and cook, turning occasionally, until browned on all sides and cooked through, about 10 to 12 minutes.

Turkey should reach an internal temperature of 165°F.

Transfer the meatballs to a plate and keep warm.

Make the sage brown butter

Reduce the heat to medium-low.

Add the butter to the same skillet and let it melt.

Add the sage leaves and thyme. Cook gently until the butter begins to foam and turn golden brown, about 2 to 4 minutes.

Add the garlic and cook for another 30 seconds.

Remove from the heat as soon as the butter smells nutty and the milk solids are deeply golden. Do not let it burn.

Season with a small pinch of salt and black pepper.

Finish and serve

Return the meatballs to the skillet and spoon the sage brown butter over them.

Serve with the roasted cauliflower and drizzle any remaining brown butter over the vegetables.

Cooking Notes

Ground turkey with a little more fat works better here than ultra-lean turkey breast.

Do not overmix the meatball mixture or the texture can become dense.

Brown butter changes quickly once it starts to color, so stay near the pan.

The cauliflower needs enough room on the sheet pan to roast rather than steam.

You can make the meatballs ahead and reheat them gently in the brown butter before serving.
